Bessie May’s Cowboy Cookies

The perfect chocolate chip cookie – declared by basically everyone who’s ever tried them.

Ingredients:
1 cup butter (2 sticks)
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
2 cups quick cooking oats (or rolled old fashioned oats that give more of a chew)
2 cups flaked coconut
2 cups semi-sweet chocolate chips

Method:
Set out butter to soften to room temperature. Preheat oven to 350.

Cream butter and sugars. Add eggs one at a time and vanilla. Add salt, baking powder, and baking soda; add flour 1/2 cup at a time until incorporated. Add oats and coconut, then chocolate chips.

Bake 10-14 minutes until golden brown. Let cool.
