White Chocolate Macadamia Nut Cookies

Another favorite of Grammie’s – written down more times than I can count.

Makes about 56 cookies.

Ingredients:
1 cup butter (2 sticks, 16 tbsp), softened to room temperature
3/4 cup white sugar (175 g)
3/4 cup brown sugar (175 g)
1 egg
1 tsp vanilla extract
1 tbsp water
2 cups flour (400 g)
1 tsp baking soda
1/2 tsp salt
2 cups white chocolate chips (approx. 1 x 11 oz bag)
4 oz chopped macadamia nuts (about 3/4 cup)
Dried cranberries, optional

Directions:
Cream the butter and sugars together. Add the egg, vanilla, and water.

Add the flour, soda, and salt. The dough will be very thick. Add the white chocolate chips, then the macadamia nuts. If you using adding cranberries, add them now.

Preheat the oven to 350 and place the dough to cool in the fridge or freezer for about 20 minutes (or up to a few hours if you’re not ready to make the cookies now). You can also scoop the dough into balls before cooling (I like to do this as the dough is easier to scoop when warm).

Scoop the dough into balls, then flatten them slightly with your hand – this helps them spread more in the oven. Bake at 350 for around 12 minutes, until golden brown at the edges.
