Knoblach Suppe (German Garlic Soup)

Ingredients:
8 cups beef broth
1 head of garlic, finely minced
1/2 cup onion, finely minced
1/4 cup italian parsley, chopped
1 bay leaf
1/2 teaspoon thyme
Crusty french bread
Smoked provolone or gouda cheese
Eggs

Directions:

For the soup:
Saute onion in a soup pot until tender. Add garlic and saute until fragrant, about 30 seconds. Add beef broth and bay leaf and thyme. Bring to a boil, then resuce heat and simmer 15-20 minutes.

Meanwhile, prepare the toast:
Slice the bread and cheese. Top the bread with butter or oil and toast (either in the oven or a toaster). Fry the eggs over easy. Place a slice of cheese and fried egg on top of each piece of toast.

Salt and pepper to taste in the soup. Serve the soup topped with a piece of toast. Garnish with parsley
