We like to make these with any kind of warm, comforting soup. They are basically a knock-off Cheddar Bay Biscuit.
Ingredients:
2 cups all-purpose flour
2 1/2 tsp baking powder
1 tsp salt
1 tbsp sugar
1 cup milk
4 oz cheese, grated
1/2 cup butter, divided
1/8 tsp garlic powder
1/8 tsp Italian seasoning
Method:
Preheat the oven to 425° F. In a mixing bowl, stir together the flour, baking powder, salt, and sugar. Stir in the milk.
Melt 1/3 cup of the butter, then mix into the dough. Add the cheese and mix until it is spread evenly throughout the dough, but do not over-mix.
Scoop the dough onto a greased or lined baking sheet. (I use my ice cream scoop which yields about 9 biscuits.) Bake for 12-14 minutes, until the biscuits are golden brown.
Melt the remaining butter and stir in the garlic powder and Italian seasoning, brush over the biscuits after they are done baking.
Yields 9-10 biscuits – Prep time: 5 min – Bake time: 14 min
Notes: You can do these with grated butter and mix it in like a true biscuit (in this instance you would add the butter before the milk). But I never have the time or patience for that, and they turn out just as fluffy and yummy with melted butter.
