Sheetpan Chicken Quesadillas

Ingredients:
8 tortillas
8 oz Monterey Jack cheese, shredded
Half a rotisserie chicken, diced or shredded
2 tbsp oil

Method:
Preheat the oven to 425.

Grease the base of the sheet pan with 1 tbsp of the oil. Then place your bottom layer of tortillas so they are overlapping. Spread your cheese, then chicken, then top with more cheese. Top with the last tortillas over the center and fold the bottom tortillas over to cover all of the filling.

Add another sheet pan on top to keep it flat during the first 10 minutes of baking. Bake for 20 minutes, removing the top baking sheet half-way through.

Slice, serve, and enjoy.
