Corn Fritters

Ingredients:
¾ cup all-purpose flour
¼ cup corn flour
1 teaspoon baking powder
½ package frozen corn, 2 cans corn drained, or 3 ears fresh corn, corn kernels cut from cob
½ cup finely chopped onion
¼ to ½ cup chopped green or poblano pepper
2 eggs, separated
½ cup heavy whipping cream
salt and freshly ground pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chipotle pepper powder
½ teaspoon Tajin
½ lime juiced or 1 teaspoon lemon juice
⅛ teaspoon cayenne
vegetable oil for frying, as needed

Directions:
Sauté the onion and peppers until translucent. Whisk flour spices and baking powder into a bowl and mix in corn kernels and sautéed vegetables. Add the egg yolks and cream and stir into the corn mixture; add citrus juice & season with salt and black pepper. Beat egg whites with an electric mixer until fluffy and stiff peaks form in a separate bowl. Gently fold egg whites into the batter, retaining as much volume as possible.

Fry in olive oil.

Drop fritters into the hot oil, 2 to 3 tablespoons at a time, and cook until golden brown, 2 to 3 minutes per side. Drain fritters on paper towels and serve drizzled with cane syrup.
