Zucchini Bread

Ingredients:
2 cups sugar
4 eggs
1 cup oil
2 teaspoon grated lemon peel
1 teaspoon orange extract (or grated orange peel)
1 teaspoon vanilla extract
3 cups flour
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
2 cups grated zucchini
Nuts (optional)

Directions:
Preheat the oven to 350 degrees.

Beat the eggs, then add the sugar, oil, lemon and orange, and vanilla. Sift the flour, baking powder, baking soda, salt, and spices together into a bowl, then add to the egg mixture alternately with the grated zucchini. Mix until just well-combined. Add nuts if using.

Bake in a greased loaf pan for 35 min at 350 degrees. Makes approximately 3 large loaves (can also use small loaf pans or make muffins in a cupcake tin).
