Swedish Potatoes

This recipe comes from the American Girl Kirsten’s Cook Book. They are soft and creamy and decadent – a perfect pairing with Swedish Meatballs.

Ingredients:
1 medium onion, minced
6 medium gold potatoes, cubed
1 tsp salt
1/4 tsp pepper
1 tbsp butter
1 3/4 cup heavy cream (or half-and-half)
1 tbsp oil

Method:
Add 1 tbsp butter to a skillet over medium heat. Sauté the onions until soft.

You can finish these either in the oven, or the stovetop in a skillet.

Oven method: Preheat oven to 350 degrees. Add the potatoes and onion to a prepared 9×13 baking dish, then add the salt, pepper, and heavy cream. Gently stir to thoroughly coat the potatoes and onions. Bake 90 minutes (or longer as needed), stirring every 30 minutes, until potatoes are soft and fork tender.

Skillet method: Add the 1 tbsp oil to the skillet with the onions. Add the potatoes and cook over medium heat for 10 minutes. Sprinkle with salt and pepper and stir a few times. Add the cream, stirring all the while. When the liquid begins to bubble, turn down the heat and simmer for 10-15 minutes. Test the potatoes to be sure they are soft and fork tender.
