Corned Beef Hash

Ingredients:
1 lb potatoes, chopped
1/2 sweet onion, minced
1 lb corned beef
2 tbsp butter
Salt and pepper
Eggs

Method:
Melt the butter in a large skillet over medium heat. Add the onions and cook until translucent and fragrant, about 3-4 minutes.

Add the potatoes and season with salt and pepper to taste. Cook, stirring often, until potatoes are done, 15-20 minutes.

Once the potatoes have reached the desired tenderness, add the corned beef and cook another 5 minutes.

Top with a fried egg or other toppings of your choice.
