This recipe comes from Jason’s Uncle Gary.

Ingredients:

  • 4 eggs
  • 1 cup milk
  • 1 cup flour
  • Powdered sugar and lemon juice for topping

Directions:

Preheat oven to 400°. Place butter in a 4 quart casserole dish (or any square baking dish) and put in oven to melt butter.

Using a blender, first blend eggs for 1 minute. Then add milk and blend until well whipped. Then add flour gradually and blend until lumps are gone.

Pour the batter into the preheated dish, then bake for 25 minutes.

Let pancake settle for a few minutes before cutting and serving–center will sink.
